Tabi Variety · Honey Process

Tabi & Honey. The Sweetness in Our Cup.

What the Tabi variety is, what the honey process is, and why that combination defines Aural's sweetest profile.

The Variety

What Is Tabi Coffee?

Tabi is a Colombian variety developed by Cenicafé from a cross of Typica, Bourbon and Caturra. We grow it on our own farm in Fresno, Tolima, at 1,506 MASL, and it's our flagship honey-process lot. We also work with allied growers, like Duvan Quisaboni in Huila, to bring in lots of other varieties like Gesha.

The Process

What Is the Honey Process?

In the honey process, the coffee is depulped to remove the cherry skin, but part or all of the mucilage —the sticky, sweet layer around the bean— is left on during drying. That mucilage, called "honey," is where the process gets its name: it adds body, sweetness and notes that don't appear in a traditional washed process.

Cup Profile

Chamomile, Lime and Caramel.

Our Tabi honey lot scores 84.25 SCA points, with a perfect 10/10 in sweetness and clean cup. On the nose, panela and brown sugar; in the mouth, chamomile, lime and caramel notes; in the aftertaste, molasses and honey that linger on the palate.
